HOWDY,

     HERE'S BUT A FEW OF THE 
MANY....FRITTERS, PUDDINGS, SOUPS, 
BREADS (OTHER THAN REG. CORN BREAD), 
AND SALADS.

MY GRANDMOTHER MADE THE MOST  
WONDERFUL CORN FRITTERS. THIS IS AS 
CLOSE AS I CAN GET TO THE RECIPE.

SCRAPE 2 1/2 CUPS FRESH CORN
ADD:
1 WELL-BEATEN EGG YOLK
(2 TSPOON FLOUR)
1/4 TSPOON SALT

WHIP UNTIL SOFT NOT DRY: 1 EGG WHITE

FOLD CORN MIXTURE INTO IT. COOK LIKE 
PANCAKES UNTIL LIGHT BROWN AND FLUFFY.
CAREFUL NOT TO OVER COOK.
