                           PINEAPPLE-UPSIDE-DOWN CAKE



                              Aluminum foil
                              Butter
                              1 can pineapple slices
                              1/2 cup brown sugar
                              1 white or yellow cake mix
                              milk for cake mix if necessary



               Line dutch oven with foil to prevent sticking. Be sure
          to cover sides, but do not let foil hang out or prevent lid
          from sealing. Pre-heat oven over 6 to 8 coals while prepar-
          ing the cake mix per the box instructions. Grease the foil
          with butter. Line the bottom of the foil with pineapple
          slices. Sprinkle the brown sugar and 2 to 3 tablespoons of
          the pineapple juice over the slices. Cover, add 18 to 24
          coals on the lid and cook 30 to 40 minutes or until a knife
          inserted into the cake mix comes out dry. Be sure to check
          it every 10 to 15 minutes. Serves 8 to 10
