 Hi Mike -- your 50+ per year consumption make increase just a tad after this
 <g>, but I searched my recipe base and found about 24 recipes calling for
 artichokes.  Thought 10 might do you for now <g>.  I'll post each
 separately, so that the post doesn't get cut off.  Have some you'd like to
 post?

MMMMM----- Recipe via Meal-Master (tm) v7.07

      Title: Artichoke Heart Fritters
 Categories: Appetizers, Vegetables, Vegetarian
   Servings: 16

      4 md Artichokes
      1 tb Lemon juice
    3/4 ts Salt
      1    Egg; beaten
    1/3 c  Beer or milk
      1 ds Black pepper
    3/4 c  Prepared biscuit mix
           - (buttermilk type)
           Oil for deep frying

  Trim hearts from artichokes. Quarter hearts and add to 1 inch boiling water
  seasoned with lemon juice and 1/2 teaspoon salt. Cover and cook about 20
  minutes, or until just tender. Drain. Combine egg, beer, remaining 1/4
  teaspoon salt and pepper. Stir in biscuit mix. Dip artichokes in batter and
  fry until browned in oil heated to 350F, turning fritters once. Drain on
  paper towels. Serve hot as snack or meat accompaniment.
