Re: Red Beans and Rice

You can cook the beans just as said on the back of the bag. When they're
done, though, take a quarter of them, mash them, and mix them back in with
the rest. This will thicken the mixture. While cooking the beans, add maybe
1/2 a cup each of chopped onions and bell pepper, and all the spices you
like. My favorites include white pepper, paprika, a little basil or oregano,
cayenne, garlic powder (w/ fresh, the flavor tends to boil out too much), and
even chili powder. Fresh parsley is also good. For more flavor, add meat at
the beginning, such as smoked sausage, ham hocks, or good bacon even.

The rice you can cook in a bread pan, covered w/ foil, for 45 minutes at 300
degrees. Use 1-1/2 times the liquid as rice. You can also add onions and
spices here.
