Try this one on for size.
A tad bit on the expensive side but worth every drop.


                     Cream of Artichoke Soup



1/2  C    Plus 2T   Butter
1/2  C              Carrots, Chopped
1/2  C              Celery,  Chopped
1/2  C              Onions,  Chopped
1/2  C              Mushrooms, Chopped
1/4  C              All Purpose flour
1    C              Chix Stock
2                   8 1/2 oz cans quartered artichoke hearts,
juice                    reserved.
1                   Bay leaf
3/4  t              salt
1/2  t              fresh ground black pepper
1/4  t              ground red pepper
1/4  t              dried thyme or 3/4 t fresh chopped
1/4  t              dried oregano or 3/4 t fresh chopped
1/4  t              ground sage
                    Pinch of Hungarian Paprika
1    C              heavy cream


     Melt 2 T butter in a heavy skillet over medium heat. Add
carrots, celery, onions, and mushrooms.

     Saute until vegs are soft and onions are clear, About 15
min. Set aside. Melt remaining butter in a large stockpot over
low heat.

     Add flour and cook, stirring constantly, about 5 min. Stir
in vegs. Add stock in a slow steady stream stirring constantly.
Add the Artichoke hearts with the juice, and all the spices,
STIR.

     Increase heat to medium and simmer approxametly 30 mins.
stirring occasionally. Beat cream in a bowl just until frothy.
Blend into soup, Heat through but don't boil. Discard the bay
leaf. Adjust the seasonings.   Serve Immediately..
