   Fishing and hunting trips were popular with groups of men and boys.  A
sack of cornmeal, either of the white or the yellow variety, was always taken
along.  It was used both to coat the fish, and to make little balls of corn-
pone mixture, which were fried in hot lard in an iron skillet over the fire.
   As the hot, crusty balls browned along with the frying fish, the latter
gave off such a delicious odor that  the hunting dogs that always accompanied
their masters began to whine with unbearable longing.  To quiet the pleading
hounds, the fisherman or huntsmen would toss them some of the savory fried
cornmeal pones with the words, "Hush puppoy!"  And so the famous hush puppies
of the American South received their name.
   The following recipe is a slightly richer, improved Southern version of
the early fishing-camp variety.

                                Hush Puppies

1 cup white cornmeal                1 teaspoon baking powder
1 teaspoon salt                     1/8 teaspoon white pepper
1/2 teaspoon sugar                  1/4 cup milk
1/4 cup water                       1 egg, beaten
2 tablespoons finely cut onion (Optional)
Vegetable oil or lard for frying

* In a bowl, combine the cornmeal, baking powder, salt, pepper, and sugar.
  Mix together the milk, water, and beaten egg.  Add to the dry ingredients
  and blend smooth.  Add the onion.
* Into a deep, heavy skillet, pour vegetable oil to a depth of 1/4 inch, or
  add enough lard to melt to a similar amount of fat.  When fat is hot, drop
  mounds of hush-puppy mixture into it by the rounded teaspoonful.  Each mound
  should be about the size of a large walnut.  Fry until golden-brown on
  bottom, turn, and fry other side.  Remove with a slotted spoon and drain on
  absorbent paper.  When all the hush puppies have been fried, serve at once.
  Hush puppies may be kept warm for a short while in a 200-degree oven.

  Makes 18 hush puppies.
