This recipe is from Mimmetta, a new restaurant in Washington.  It specializes
in Sicilian food, much of it low in fat and delicious.

                            Orange and Fennel Salad

2 eating oranges
1 small fennel bulb
4 tablespoons chopped onion
2 tablespoons fresh orange juice
1 tablespoon olive oil
2 teaspoons capers


Peel oranges, cut into small dices, reserve juice.  Trim tops and bottom off
fennel, remove outer part if tough or bruised.  Slice bulb thinly, then dice.
Finely chop onion.  Mix reserved juice with fresh juice and oil.  Add oranges,
fennel and onion, mix to coat.  Spoon onto salad plates.  Rinse and dry capers,
sprinkle over salads.

Yield: 2 servings.
