         How about
Pork-tail Stew

Wash tails thoroughly twice in boiling water.
Rinse in cold water and dry.
2 lbs. pork tails cut into 2 or 3" pieces
2 tbls lard or other fat.
 2 small onions sliced
1 large carrot cut into thick slices
 1/4 cup celery diced
6 tablespoons flour
 2  cups hot water 1 cup canned tomatoes
 3 whole cloves
3 bay leaves
 salt and pepper
 Brown tails lightly in the oil in large kettle or dutch
 oven. Add onion, carrot, celery and cook for 10 minutes. Brown flour in
 skillet and sprinkle over meat and vegetables. Add remaining
 ingredients. Bring to a boil, cover and simmer until meat begins to
 fall from bone, about 2 hours
 salt and pepper to taste. Good with parsley potatoes,green beans and
 red cabbage. Makes 4 serving
