      Title: Red Beans and Rice
 Categories: Vegetables, Cajun
   Servings:  6

      2 c  Dry kidney beans
      2    Ham hocks
      1 md Onion; finely chopped
      2    Garlic cloves; minced
      3 c  Rice

  RINSE THE BEANS, then soak them overnight in enough water to cover them by
  1 inch. Put the beans, the soaking liquid, the ham hocks and 3 cups of
  water into a stock pot. Cover, bring to a boil, and simmer until the beans
  are just tender, about 1 hour. Remove the ham hocks and let them cool. Add
  the onions and garlic to the pot and simmer for 10 minutes. Slice the meat
  off the ham hocks and add to the pot. Add the rice and simmer until the
  rice is tender and the water is absorbed (it may be necessary to add more
  water).

      Title: Creole Red Beans and Rice

   Servings:  8

      2 c  Red beans,dried
      1 x  Salt to taste
    1/4 c  Bacon drippings
      2 c  Salt pork
      1 c  Onions,chopped
    1/4 c  Parsley,chopped
      6 c  Water
      1 x  Black pepper to taste
      2 c  Ham,diced
      2 c  Sausage,smoked
      2 ea Garlic cloves,minced
      4 c  Rice,hot cooked

  1. Rinse beans; soak in water 30 minutes, then cook slowly until tender,
  about 2 hours (add boiling water as necessary).
  2. Add salt and pepper to taste.
  3. Heat bacon drippings in skillet; saute ham, salt pork or sausage, then
  add onions and garlic, cooking until translucent.
  4. Stir into cooked beans along with parsley.
  5. Remove about 1 cup beans; mash or put through a sieve and stir into
  beans (this will thicken the juices).
  6. Serve over hot rice.

   Servings:  8

      1 lb Red kidney beans
      2 lb Hot smoked sausage, chunks
      2 ea Large onions, chopped
      1 x  Garlic powder, to taste
      1 ea Pepper, to taste
    1/2 lb Ham, cubed
     10 c  Water
      4 tb Cooking oil
      1 ea Salt, to taste

  Rinse and sort beans.  Cover with water in large pot and cook over low
  fire, covered, for one hour. Brown onions, ham, and sausage in oil and add
  to beans.  Continue cooking beans mixture for two hours on low to medium
  heat, partially covered, stirring often. Add garlic powder, salt, and
  pepper, cook for another hour, or until beans are tender. Add water as
  necessary. If a creamer sauce is desired, mash 1/2 cup of cooked beans
  through a strainer and stir into beams mixture. Tasso or andouille may be
  substituted for the ham. Serve over hot, fluffy, long-grained rice with
  warm french bread.
