     Title: Authentic Pennsylvania Dutch Shoo Fly Pie
Categories: Pies, Desserts
  Servings:  8

    1/2 c  Baking Molasses
      1    Egg Yolk
    1/2 t  Baking Soda
    3/4 c  Boiling Water
    3/4 c  Flour
    1/2 c  Brown Sugar
      2 T  Butter
    1/8 t  Nutmeg
    1/8 t  Ground Ginger
    1/8 t  Ground Cloves
    1/2 t  Cinnamon
    1/4 t  Salt
      1    Pastry for 9 inch pie

  Dissolve soda in boiling water and add to egg and molasses.  Set
  aside. Stir dry ingredients together, mixing well.  Cut in
  shortening until mixture looks like coarse crumbs.  Pour molasses
  into pie shell.  Sprinkle crumbs evenly over top.  Do not stir.
  Bake at 450 degrees for 15 minutes then reduce heat to 350
  degrees and bake 20 minutes longer.  Cool and serve.

     Title: SHOO FLY PIE

  Servings:  6

           Pastry for 9" crust pie
    1/2 t  Baking soda
    1/4 c  Hot water
    1/2 c  Molasses
      1    Egg yolk,well beaten
    3/4 c  Flour
    1/2 t  Cinnamon
    1/8 t  Each: mace,ginger,cloves
    1/2 c  Brown sugar
      2 T  Shortening,melted
    1/2 t  Salt

  Line 9" pie plate with pastry;chill.Dissolve soda and water; beat
  into molasses.Blend in egg yolk;pour into pie crust.Combine
  remaining ingredients to make crumbs.Sprinkle over pie.Bake in
  preheated 400 degree oven for about 10 minutes or until crust
  begins to brown.Reduce temperature to 325 degrees;bake until top
  is firm.

     Title: Shoo-Fly Cake (Old Lehigh County Recipe)

  Servings:  1

  1 1/2 c  Flour
      1 c  Brown sugar
    1/4 c  Lard
           -*or:
    1/4 c  Butter
    1/2 c  Molasses
    1/2 c  Water, hot
    1/2 ts Soda
           *pastry

  Make crumbs by combining the flour, sugar and shortening. Line a pie
  pan with pastry. Dissolve the soda in the hot water and combine with
  the molasses. Pour into the pastry-lined pan, top with the crumbs and
  bake at 350-F until firm.
