3/4 cup cornmeal
3/4 cup plain flour
3 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 1/2 cups buttermilk
5 tablespoons oil

Put the oil in a 10 inch cast iron skillet.  Place in the oven and turn on to
450 degrees.  Meanwhile, mix all other ingredients in a glass or metal bowl.
When the oil is good and hot, remove from the oven and pour about 2/3 of it in
the batter and stir quickly.  Immediately pour the batter into the skillet and
return to the oven for about 15 or 20 minutes.  Should be lightly browned on
top.  Invert onto a plate.

True Southern Cornbread is always crispy on top because of the oil in the
skillet.  This is very good for breakfast with butter and honey or jelly.
