Buttermilk Griddle Cakes
1 egg
6 fl. oz soured milk or buttermilk
1 1/2 C all-purpose flour
3/4 tsp. baking soda
1 rounded tsp. sugar
1/4 tsp. salt
2 oz margarine or oil, melted

1.  Beat the egg and buttermilk together.  Sift the dry ingredients and stir
them into the egg mixture, then whisk in the melted margarine.  Add a little
more milk or water if the mixture is very thick.
2.  Heat griddle, lightly greasing pan.  Pour scant 1/4 cupfuls.  When
edges begin to turn upwards, flip over.

These pancakes are lighter and fluffier and more tender than regular pancakes.
