      Title: Chorizo Corn Bread Stuffing
 Categories: Misc.
   Servings:  8

      4 tb Butter                            1/2 ts Black pepper
    1/2 lb Chorizo or other smoked             5 c  Crumbled corn bread, tightly
           Sausage, coarse chopped                  Packed
      1 c  Diced green & red bellpepper        2 c  To 2 1/2 c. chicken broth
      1 ea Jalapeno pepper, seed/dice          1 c  Pine nuts, toasted
    1/2 c  Chopped onion                     1/2 c  Finely chopped green onion
    1/2 c  Chopped celery                    1/4 c  Chopped fresh cilantro
    1/2 ts Chili powder                      1/2 c  Chopped fresh parsley
    1/2 ts Oregano

  Melt butter in a Dutch oven or large skillet.  Saute chorizo until
  slightly browned.  Add peppers, onion and celery to the skillet and saute
  until crisp=tender.  Remove from heat.

  Add seasonings and corn bread.  Toss together.  Add chicken broth to
  desired consistency.  Mix in pine nuts, green onion, parsley and cilantro.
  Use to stuff turkey or bake at 350 degrees in a low, shallow pan until
  lightly browned, about 20 to 30 minutes.  Add more broth if necessary.
