          Chicken Fajitas Grande'

          2 lb. boneless chicken breasts
          1 lg. yellow onion, separate into
            rings
          1 yellow or green bell pepper cut
            into 1/4 inch strips
          Marinade:
          3 cloves minced garlic
          1 t. cumin
          1/3 c. worcestershire sauce
          1/4 c. soy sauce
          1 t. liquid smoke
          2 t. vegetable oil
          1/4 t. oregano
          1/4 t. thyme
          1/4 t. cayenne pepper
          1/4 t. black pepper
          3 T. lime juice
          1 shot tequila (recommended)
          other ingredients:
          chopped fresh cilantro
          shredded cheddar and jack cheeses
          sour cream
          salsa
          guacamole

          Place chicken breasts in a non-metallic container.  Top
          with onion rings and green pepper strips.  Combine
          marinade ingredients in a small bowl, mix well and pour
          over meat and onions.  Refrigerate 8 hours or overnight.
          Remove meat and onions from marinade, reservingthe onions,
          peppers and marinade.  Place meat on grill, basting often
          with the marinade and turning often.  Meanwhile saute'
          onion and peppers in butter and salsa.  When the chicken
          breasts are done, slice into thin strips and add to the
          skillet with the sauteed vegetables.  Heat flour tortillas
          quickly on the grill.  Watching and turning them often.
          Serve mixture hot on warm flour tortillas with sour cream,
          grated cheddar and jack, fresh cilantro, salsa and
          guacamole.

      Title: Chicken Fajitas
 Categories: Mexican, Poultry
   Servings:  4

      1 lb Chicken breast fillets,         1 1/2 tb Vegetable oil
           Sliced into thin strips             2 md Tomatoes, diced
    1/2 c  Lime juice                          1 x  Sour cream
      1 x  Garlic salt                         1 x  Shredded cheddar or Jack
      1 x  Seasoned pepper                     1 x  Shredded lettuce
      1 md Onion, sliced                       1 x  Chopped tomatoes
      1 md Red, yellow and/or green            1 x  Picante sauce
           Bell pepper, slice in strips        4 x  Soft corn tortillas, heated

  In a shallow baking dish, lay chicken strips flat and drench with lime
  juice.  Sprinkle liberally with garlic salt and seasoned pepper.  Cover
  and refrigerate for about 2 hours.

  When ready to cook, proceed as follows:  In a large skillet, saute peppers
  in oil over medium heat until slightly tender.  Add onions and saute both
  until soft.  Remove vegetables and set aside.  Place chicken in skillet,
  discarding remaining lime juice.  Cook until no longer pink.  Return
  onions and peppers to skillet and mix thoroughly with chicken.

  Spoon mixture into tortillas.  Top with sour cream, cheese, lettuce,
  tomatoes and picante sauce.  Carefully fold tortilla so that one end is
  closed and eat from the opposite end.
