          Carolina Style Baked Country Cured Ham

          1 country cured ham
          water, ginger ale, apple cider,
            orange juice, pineapple juice,
            peach pickle juice or cola of
            choice to a height of 2 inches
            deep in baking pan for the ham
          glaze 1:
          1 generous tsp. dry mustard
          1 T. prepared mustard
          1 c. orange juice, pineapple
            juice or peach pickle juice

          Glaze 2:
          cloves
          brown sugar
          honey
          apple cider
          Glaze 3:
          8 oz. sweet wine
          dark molasses

          Wash country cured ham thoroughly and put in a covered
          roaster, fat side up.  Pour 2 inches of water or optional
          liquid of choice over the ham.  Roast in a moderate 350
          degree oven for about 20 minutes per pound or until done.
          Baste often.  When nearly cooked, remove the rind and trim
          off some of the fat.  Score the surface of the fat in
          diamond shapes and use one of the three glazes.  GLAZE 1:
          Cover the fat with a paste made of one generous teaspoon
          of dry mustard and 1 tablespoon of prepared mustard.  Pour
          over ham one cup of orange juice or other choice and
          return to hot 450 degree oven.  Uncover and finish baking
          basting frequently.  GLAZE 2:  Stud the diamond shapes
          with cloves and cover with brown sugar and honey.  Add
          apple cider and glaze in a hot 450 degree oven basting
          frequently.  GLAZE 3:  Pour eight ounces of sweet wine
          over the ham and spread with dark molasses.  Glaze in hot
          450 degree oven for 8 to 10 minutes.  Baste gently and
          drequently.  Note:  If you like your ham mild, soak in
          cool water for 12 hours depending on the age of the ham.
          If ham is very old, soaking for 24 hours may be
          necessary.  Makes 20 to 25 servings.
