RE: AAaahhhhh.....GREEK Chicken Soup...

I noticed quite a few messages back (Just joined the sub and started from the
begining) that Linda Tsilikoudis was talking about the foam from the careful
blending of the egg/lemon mixture with the hot broth as to not cause
"egg-drops".

This has been a favorite recipie of mine and  I was pleasantly surprised to see
it being discussed. I make mine a bit differently,..but deliciously all the
same. Being a student and part time DJ I have to be cheap and fast although
produce very tasty filling meals. I take a can of the hearty Chicken and rice
soup and warm it up,....seperate the yolk from the whites. I then squeeze a
whole lemon into the soup and heat on med......I stir in the yolk and let the
mixutre heat up to nearly boiling and then,..contrary to the traditional way, I
drop the egg whites in and it is delicious! I love the egg-drop soup style and
I also add pepper and Lemon & Herb seasoning. MMMmmmmm......and it DOES make
you feel better if you are comming down with something.....great soup!

Since we are talking soup,..has anyone ever heard of the "Inspiration Soup"?
It's one the cafe I worked at a while back used to serve. It's a cream base
soup with lots of veggies in it like new potatoes, artichoke hearts, peas,
onions, celery, fresh spinach, and a bit of allspice, cumin, fennel, salt and
pepper. (Give or take a few ingredients..it was absolutely scrumptious! I may
have the complete recipie around here somewhere. If not I know where to get it!
Plus another favorite Chili-Cheese Potato soup!Mmmmm.)
