      Title: Healthy Style General Tso's Chicken (Formosa)
 Categories: Chinese, Poultry
   Servings:  4

      1 ea MARINADE:                           1 ea OTHER INGREDIENTS:
      2 tb Shao Hsing Wine                     2 tb Peanut oil
      1 tb Dark soy sauce                      8 ea Whole dried chile peppers
      2 ts Cornstarch                          2 ts Minced garlic
      1 lb Boneless, skinless chicken          1 ts Minced ginger
           Cut into 1" pieces                  1 ea Onion, cut in 1" pieces
      1 ea SAUCE:                            1/4 ts Crushed red pepper
      2 tb Chicken broth                     3/4 c  Roasted unsalted peanuts
      1 tb Rice vinegar                        1 ts Cornstarch disolved in 2 ts.
      1 tb Regular soy sauce                        Water
      2 ts Dark soy sauce                      1 ea Bell pepper, cut in 1"
      1 ts Sesame oil                               Pieces (optional)
      2 ts Sugar

  Combine the marinade ingredients in a medium bowl.  Add the chicken and
  stir to coat.  Let stand for 30 minutes.  Combine the sauce ingredients in
  a small bowl.  Heat a wok over high heat until hot.  Add the oil and
  chiles and stir fry until the chiles darken to a deep red, about 10
  seconds.  Add the chicken and stir fry for 2-3 minutes. Add garlic,
  ginger, onion, bell pepper and crushed red pepper, stir fry for 1 minute.
  Add the sauce and peanuts and cook, stirring for 1 minute.  Add the
  cornstarch solution and cook, stirring, until the sauce thickens and the
  chicken is nicely glazed.

  Note:  This version is simpler, quicker, healthier and just as delicious.
  For additional flavor, texture, and protein, I've added roasted, unsalted
  peanuts which are not traditional in this dish.

  Note 2:  I know it seems that using 8 whole chile peppers in this dish is
  excessive but this amount will produce only a medium hot dish.  Remember
  the seeds inside the chiles are not exposed to the oil or the liquid...
