Mocha Macaroons
3 egg whites
1 tsp. freeze-dried instant coffee  (dry)
1/4 tsp. cream of tartar
1/8 tsp. salt
1/2 C sugar
2 tbsp. cocoa
2 C flaked coconut

Heat oven to 300 degrees.  Grease cookie sheet lightly.  Beat egg whites,
coffee, cream of tartar and salt in medium bowl on high speed until foamy.
Beat in sugar, 1 tablespoon at a time, on high speed.  Continue beating until
stiff.  Do not underbeat.  Fold in cocoa.  Fold in coconut.

Drop mixture by rounded teaspoonfuls 1 inch apart onto cookie sheet.  Bake 20
to 25 minutes or until set.  Cool 10 minutes;  remove from cookie sheet.
Cool on wire rack.  Sprinkle with additional cocoa or drizzle with melted
chocolate if desired.  About 3 1/2 dozen cookies.
