Oven Caramel Corn
15 C popped popcorn
1 C packed brown sugar
1/2 C  (1 stick)  margarine or butter
1/4 C light corn syrup
1/2 tsp. salt
1/2 tsp. baking soda

Heat oven to 200 degrees.  Divide popcorn between 2 ungreased rectangular
pans,  13 x 9 x 2 inches.  Heat brown sugar, margarine, corn syrup and salt
in 3-quart saucepan over medium heat, stirring occasionally, until bubbly
around edges.  Cook 5 minutes, stirring occasionally;  remove from heat.
Stir in baking soda.  Pour over popcorn;  stir until well coated.  Bake 1
hour, stirring every 15 minutes.  About 15 cups snack.

NUTTY CARAMEL CORN:  Decrease popcorn to 12 cups.  Add 1 1/2 cups walnut
halves, pecan halves, peanuts or unblanched whole almonds to each pan of
popcorn before stirring in brown sugar mixture.

Store tightly covered, especially if you make it a week or two ahead of time.
