Quiche Lorraine
1 deep 9" pie shell, uncooked
3 rashers of lean bacon, fried and crumbled
Seasoning  (to taste)
3 eggs
1/2 pint of milk or half milk and half thin cream
4 oz grated cheddar cheese

1.  Bake the flan case 'blind',  at 400 degree oven, for 15 minutes,
     until the pastry is just set and pale golden - do not overcook!
2.  Meanwhile, beat the eggs, warm the milk.  Add milk to the eggs.
     Add crumbled bacon, seasoning, grated cheese.  Spoon into pie
     shell.
3.  Lower the oven to 350 degrees, and bake for approximately
     45 minutes to 1 hour;  Serve hot or cold.
