          Stovetop Quesadillas

          4 burrito sized flour tortillas
          2 c. cooked cubed or shredded
            chicken
          2 c. shredded Jack or cheddar
          1 c. Paul Newman's Hot Salsa

          Lightly spray a 10 inch skillet with vegetable oil.  Place
          one tortilla in the bottom.  Spread 1/2 cup of shredded
          cheese on one half of the tortilla, leaving the other side
          plain.  Cover the cheese with 1/2 cup of chicken and pull
          top of tortilla over filling.  Brown in skillet on medium
          heat for about 3 minutes or until the cheese is melting
          and the tortilla is browning.  Repeat with remaining
          tortillas and fillings.  Cut into wedges or leave whole
          and serve with salsa and sour cream.  OPTIONAL FILLINGS:
          green chilies, jalapenos, olives, tomatoes, ground beef,
          ground pork, refried beans, whatever strikes your fancy.
          Note:  Make sure you use very fresh tortillas so they are
          soft and maleable.  Try microwaving them individually
          between two sheets of wet paper towels so they are soft
          when thawed.
