      Title: Tri-Flavored Chinese Chicken
 Categories: Chinese, Poultry
   Servings:  4

      1 x  MARINADE:                           2 tb Lime juice
      2 tb Soy sauce                           2 tb Lt. brown sugar (packed)
      2 tb Dry sherry                          1 x  OTHER INGREDIENTS:
      1 tb Cornstarch                          2 tb Cooking oil
    1/4 ts White pepper                        1 ts Minced ginger
      1 lb Boneless, skinless chicken,         1 ts Slivered orange peel
           Cut into 1" cubes                   1 ts Slivered lemon peel
      1 x  SAUCE:                              1 ts Slivered lime peel
    1/4 c  Chicken broth                       2 ts Cornstarch, dissolved in 4
      3 tb Orange juice                             Tsp. cold water
      3 tb Lemon juice

  Combine the marinade ingredients in a medium bowl.  Add the chicken, stir
  to coat, and let stand for 30 minutes.  Combine the sauce ingredients in a
  small bowl and stir to dissolve the sugar.

  Heat a wok over high heat until hot.  Add the oil and ginger and cook for
  10 seconds.  Add the chicken and orange, lemon, and lime peels and
  stir-fry for 2 minutes.  Add the sauce, reduce the heat to medium-low and
  simmer until the chicken is opaque, about 3 minutes.  Add the cornstarch
  solution and cook, stirring until the sauce boils and the chicken is
  richly glazed.
