Cheese Stuffed Peppers

Ingredients:
4 large green peppers
1 cup goat cheese shredded
1 cup ricotta cheese shredded
1 cup parmesan cheese shredded
1 medium zucchini shredded
1 onion chopped
2 cloves garlic chopped
2 tbsp parsley dried

Directions:
Fry garlic, onion, parsley and zucchini in olive oil until tender.
Cut tops off green peppers and save.  Remove core and seeds.
Mix cheese together.  Add fried mixture to cheese and blend well.
Stuff peppers with mixture and place in baking dish.  Put tops
back on peppers.

Bake at 325F for 1 hour or longer if needed until peppers shrink and
have a glazed look.

Note: Do not blanch peppers for this recipe.
