It all depends on where tour tastes lie as to how to flavour jerk Meat!

Choices include Marinades of the following:

         Terriyaki

         Soya Sauce

         garlic & herb

         smoke

         cajun

              ANYTHING YOU LIKE FOR FLAVOUR!

I have a dehydrator that I make jerky in
I also use a metal rack over a fire...what ever the mode isn't important..
The oven suggestion sounded good!

I slice the meat thin strips....marinate it...and then twist it before I
start the drying process....It takes a little longer to dry but the rusult is
a healthy mouthful of flavour in each bite... Sometimes I even like to put
sesame seeds in for a differnt texture as well as flavour!
