     These cookies are my own invention - came from an aborted attempt at
building pumpkin pies.  Got nearly everything mixed together and discovered I
didn't have any evaporated milk, so I improvised.  These are moist and can be
frozen - tho they never last that long in my house.
               
               Kat's Pumpkin Cookies                    approx. 7 dozen

Preheat oven to 350 degrees F.
     Beat 4 eggs
     Add and beat well:
          1 2/3 cup vegetable oil
          1 2/3 cup sugar
     Measure and add;
          3 3/4 cup flour                1-16 oz. can pumpkin
          3 1/4 tsp baking powder        3-4 tsp grnd ginger
          1 tsp salt                     2 1/4 tsp vanilla extract
          2 tsp grnd cinnamon            1 1/2 tsp grnd allspice
          1 1/2 tsp nutmeg               1 1/2 tsp grn cloves
          3 1/2 tbls molasses
Drop by spoonfuls onto a greased cookie sheet.  (Press 1/2 pecan in center of
each cookie - optional).
Bake 10-12 minutes, or til cookies are golden brown
You can also use whole wheat  flour, but decrease the ginger by 1/2 tsp and
increase the nutmeg and allspice by 1/2 tsp.
These are cake-y and not too sweet.  Store in an open container, as they tend
to get sticky if sealed.
