Potato Puffs

Ingredients:

6 cups mashed potatoes
6 eggs
3/4 cup butter
1 1/2 cups water
1 tbs salt
1 1/2 cups flour
1/4 tsp. pepper
Oil for deep frying

In a saucepan, bring water, butter and salt to a boil.  Add flour
and stir over low heat, until mixture clings together in a ball.
Remove from heat.  Add eggs one a time, beating well.  Add
potatoes and pepper.  Beat mixture until light and fluffy.

Drop by tablespoon in hot oil.  Remove puffs when there a light
golden brown.

Cooked puffs can be frozen.  -To reheat bake at 400F for 10 minutes.
