                       Stuffed Green Peppers

Ingredients:
     5 large green peppers
     Jan's Basic Rice Mixture (below)
     1 can Campbell's Tomato Soup

     Jan's Basic Rice Mixture
Ingredients:
     2 cups long grain rice
     1/2 lb bacon
     1 large onion diced
     salt
     pepper

Directions:
Cook rice until firm and tender.  Left over rice may be used.
Fry bacon well done.  Remove bacon and dice.  Stir fry onion
in bacon drippings until tender.  Combine rice, bacon and
onion.  Add salt and pepper to taste.

Rice mixture may be prepared one day ahead or can be stored
frozen.

     Green Peppers
Cut pepper crosswise near top so you will have a lid.  Remove
core and seeds.  In boiling water blanch peppers and tops.
Peppers should be tender, but not mushy.  Remove and cool.

Stuff peppers with rice mixture and place in baking dish.
Put tops on peppers.  Pour tomato soup over all.  Add small
amount of water to can, stir, and pour over all.

Bake 1 hour at 350F.  Or all day in slow cooker.

Left over may be frozen.
