3/4 cup vegetable oil
3/4 cup fruit sweetner(or 3/4 cup frozen juice concentrate and 1/2 as much
granulated fructose.  I get 3/8 cup.
1 egg + 3 egg whites
2 tsp. vanilla
2 tsp. vanilla
1 cup crushed pineapple( in it's own juice) including juice
2 cups flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 cup shredded coconut
2 cups raw shredded carrots
2/3 cup chopped nuts

Blend oil, fruit sweetner, eggs, and vanilla.  Beat well.  Stir in pineapple.
Combine flour,baking soda,salt,and cinnamon.  Add to blended mixture.
Stir in coconut, carrots, and nuts.  Pour into 9"X13" cake pan which has
been sprayed with non-stick coating.  Bake at 350 degrees for 30-40
minutes.  Cool and frost with Cream Cheese Frosting

NOTE: Frosting adds 30 calories,5 grams carb. 1 gram protein,1 gram fat

              CREAM CHEESE FROSTING

1/3 cup flour
1 cup skim milk
2/3 cup fruit sweetner(2/3 cup frozen fruit juice concentrate plus 1/3
cup granulated fructose.
1/3 cup low-fat Neufchatel (3oz.)
Can use Light Phila. Cream cheese also
1 TBSP.  margarine
2 tsp. vanilla

Combine flour and 1/4 cup of milk in small saucepan.  Blend together
into smooth paste.  Slowly, add remaining milk and beat until smooth.
Cook over medium heat, stirring constantly until mixture becomes
thick paste.  Cover and cool in refrigerator.  When cool, scoop mixture
into large bowl.  Blend fruit sweetnerr,Neufchatel,and marg. into mixuture
Beat with elect. mixer. Stir in vanilla. Spread on cake or cookies.
VAR.  1 Tbsp. Amaretto,1TBSp. Grand Marnier,2 tbsp. Orange Juice (5 cal.)
Makes 2 cups Entire recipe = 7 bread,2 fruit,7 fat.1/4 cup = 1 bread,1 fat
