  This is another recipe in the 'fast but good' category (ie, for students.)

Take one skinless, boneless chicken breast and cook in skillet until about half
done.  Cut breast into approx. 12 pieces with good knife and put back on heat
with a small handfull of sliced onions.  Season with seasoning salt or other
favorite.  Optional: Pour a bit of salsa on cooking chicken to add a
Southwestern flavor.  Chicken should cook fast once cut.. When onions are soft,
abd before chicken is overdone, put a slice or two of cheese (I like swiss) on
top and let it melt.  The cheese will hold the meat and onions together and it
can be neatly scooped onto a sliced bun or even bread.  Top with lettuce and
tomato.
