Here is just one last sugar-free recipie that I thought you all would enjoy!

Pork Roast with Quince

3 pounds pork roast
1 teaspoon fried thyme leaves
1 cup apple juice
4 potatoes, quatered
4 carrots, cut into chunks
2 stalks celery, cut into chunks
1 onion, sliced think
1 quince or apple, cut into slices

     Sprinkle pork roast with thyme. Place in a baking pan.  Add remaining
ingredients around roast.  Cover with lid or foil.  Bake in a 325-degree oven
for 2 hours, or until roast is done.

Yield: 6 servings of 4 1-ounce slices with 2/3 cup of vegatables
