                            QUICHE LORRAINE

1 9 inch deep pie shell
3 eggs
1/2 pint half and half
4oz cheddar cheese
6 tbsp. canned corn
6 oz cooked ham
seasoning (to taste)

Preheat oven to 425F. Place pie shell on baking tray, and bake blind for
15 minutes, or until pastry is just set and pale golden.
Beat the eggs, add half and half, the grated cheese, corn, ham and seasoning.
Spoon into the partially baked pie shell, lower the heat to 350F and bake
for approximately 45 minutes to 1 hour.
Serve hot or cold.

Note: 1 large green pepper (diced) may be added to the mixture before
baking, but this is optional.
