                      Scotch Eggs

4 eggs, hard boiled
1 oz seasoned flour
8oz pork sausage meat
1 beaten egg
Breadcrumbs for coating
oil for deep frying

Toss eggs in seasoned flour.  Divide sausage meat into 4 and roll each
piece into a circle, large enough to surround the egg, on a floured board.
Place the eggs in the centre of each circle and pinch the edges well
together.  Toss in egg and breadcrumbs.  Deep fry in oil, heated to a
temperature of 340F, for about 8 minutes until crisp and lightly browned.
Drain on kitchen paper.  Serve hot or cold with a green salad.

Note: These are very popular in England, especially served cold, on a
picnic.
