                     APPLE FRITTERS

For the batter:

4oz self-raising flour
pinch of salt
1 egg
1/4 pint milk, or milk and water
2-3 large Granny Smith apples
1 tbsp. flour

To fry:

deep or shallow oil or fat

To coat:

1-2oz sugar

1.  Make the batter by blending all ingredients together.
2.  Peel, core and cut the apples into 1/4 inch slices (or slightly
    thicker.)  Dust with flour so the batter 'sticks'. Dip in batter.
3.  Heat the oil or fat, put in the fritters, cook until golden on outside;
    then lower heat to make sure they are cooked.
    If using shallow fat, turn during cooking.
4.  Bring out, drain on absorbent paper and coat in sugar.

    Note:  It is important to lower the heat at stage 3, after setting batter,
           so the apple cooks.

    Serves 4-5
    Cooking time 7-8 minutes.

VARIATIONS ON APPLE FRITTERS:

Banana fritters: use halved bananas; the cooking time can be a little less,
since bananas cook quicker.

Pineapple fritters:  Use well drained rings of canned or fresh pineapple,
dust lavishly with flour, then dip in batter.
