                               Cheesy Bacon-Baked Potatoes
                                ~~~~~~~~~~~~~~~~~~~~~~~~~~~

Description:
Filled with cheese, bacon and vegetables, these potatoes are a tasty
accompaniment and even a full meal.  Prepare ahead and save the last-minute
baking.

Preparation:  20 Minutes
Baking time:  1 hr., 20 minutes
Oven temp:    425 F and 350 F
Serves:       4

Ingredients:
4 large  baking potatoes
4 slices bacon
1/3 cup  chopped onion
1/3 cup  diced green pepper
2 cups   sliced mushrooms
1 cups  grated cheddar cheese, divided
2 Tbsp.  milk
2 Tbsp.  butter or margarine
1 egg    slightly beaten
1 tsp.   salt

Health note:
To reduce fat, use vegetarian bacon bits; steam vegetables and halve cheese.

Microwave Tips:
You may prepare the potatoes in the microwave oven.  Place potatoes on a
microwave-safe plate.  Prick with fork.  Microwave on HIGH <100%> power for
13 to 15 minutes.  Wrap in a towel; let stand 5 to 10 minutes.
Proceed from Step 3.


Preparation:

1.  Scrub potatoes.  Pat dry.  Pierce with a fork.

2.  Bake at 425F for 55 to 65 minutes or until soft.

3.  Meanwhile, sautee bacon in a skillet until brown.  Cool and crumble.

4.  In 2 tablespoons of bacon drippings, cook onion and green pepper until
still tender-crisp.  Add mushrooms.  Continues sauteeing until mushrooms are
cooked.  Set aside.

5.  When potatoes are cooked, cut a slice from the top of each.  Scoop out
flesh, keeping shell intact.

6.  Mash potato pulp.  Add 1 cup cheese, milk butter, egg, salt, vegetables
and half the bacon.

7.  Spoon mixture into shells. Top with remaining cheese and bacon.

8.  Bake at 350F for 20 minutes or until slightly brown on top.
