I don't remember now who asked for this, but I said I had a good cheese cake
recipe.  I don't know if it's "New York" or not, because I don't really know
what a New York cheese cake is.  Anyway you said you were interested, so here
it is.  Sorry it took so long.  I had to wait for my mother to send it to me
via snail mail.

                              Cheese Cake

4 - 8 oz. pkgs. cream cheese (Philly is the best choice)
5 - eggs
1 cup sugar
1 Tbl. spoon vanilla
dash of salt

Cut cheese into cubes & cream.  Add the sugar, cream some more.  Add the eggs
one at a time, then add vanilla and salt.  Pour this mixture into a spring form
pan (8 or 9 inch by 4 inch is pretty good).  Bake at 375 for 30 to 40 minutes.

Take out of oven and cool for 10 minutes.  Set oven to 475.  Make the topping
as noted below.

1 cup of sour cream
4 Tbl. spoons sugar
1 tsp. vanilla

Blend this mixture together then spread it on top of cheese cake.  Bake in oven
for about 5 min.

That's it.  This cheese cake is very creamy and rich.  It's not incredibly
sweet, but it's not really supposed to be.  Be sure to let cool thoroughly
before removing from the pan.  Don't try to speed up the cooling process by
putting it in the fridge or something.  If you do, the cake won't set up.
