 I found in one of Julia Child's latest cookbooks an easier version of creme 
fraiche and you don't have to worry about the fermentation process.

   Mix equal amounts of sour cream & 15% cream (heavy cream) in a glass bowl 
or a stainless steel bowl. Refrigerate for about 3 hours...stir & serve as a 
topping on fresh fruit or in any receipe calling for creme fraiche.
