Dohlman Chicken

16 pieces of chicken;not wings

2 Cups cooking oil

flour
3 eggs
seasoned bread crumbs
1 cup honey; for dipping chicken

Note: When  this was served on the Enterprise, it was served with finger
bowls and napkins.  But I have it on good authority that in the Dohlman's
castle on Elas, there were rushes on the floor, and huge,furry, black dogs
ambling about the dining hall, which were used as walking napkins.

Put the chicken pieces in a large saucepan,cover with water and bring
to a boil.  Simmer gently for 20 minutes, then remove from the heat.
Strain the liquid into a bowl or jar to use later where chicken broth or
stock is required.  Spread the pieces of chicken out on several thicknesses
of paper towels, or a clean terry cloth to drain.  Strain any remaining
liquid with into the bowl or jar.

Wash and dry the pan, pour in the oil and heat to about 375 degrees F.
Put about 1/4 cup flour in a bowl, beat 1 egg in another,and put about
1/4 cup of bread crumbs in a third.  replenish as needed.
Coat each piece of chicken with flour, then with egg and then
bread crumbs.  Fry 3 or 4 pieces of chicken at a time, about 5 minutes
to a side until the are golden brown.  If the pieces brown too fast,
turn the heat down.  Set at each place a custard cup with 1 to 2
tablespoons of honey in it.
Dohlman chicken should be served with french fries,carrot and celery
sticks, pickles and olives---and no untensils.  All eating should
be done by hand......
