Here's a great recipe for a chinese salad called Sumi Salad. A friend of mine
turned me on to it and I'm hooked. It's a great salad for a barbeque or
potluck.

Sumi Salad
----------

You'll need the following:

1/4 cup sliced almonds
1/4 cup sesame seeds
2 tbsp sesame oil
1 head shredded cabbage
6-8 sliced green onions
4 baked boneless/skinless chicken breasts
2 pkg Top Ramen (Chicken or Chicken Sesame flavored)

Dressing:

1/4 cup sugar
3/4 cup vegetable oil
6 tbsp rice vinegar
2 tbsp sesame oil
1 tsp salt
1 tsp pepper
2 season packets from Top Ramen (see above)

----------

Bake the chicken breasts on a cookie sheet for 20-25 minutes at 350 degrees.
If you choose to season the chicken, do so lightly as the salad itself is quite
flavorful. Let chicken cool a bit and cut into small strips.

Brown the almonds and sesame seeds in 2 tbsp sesame oil. While those are
browning, combine cabbage, onions, chicken, and Top Ramen noodles (crumble them
up) in a large salad bowl. Combine ingredients for dressing in a small bowl
and stir well. Pour dressing over salad mixture and add browned almonds and
seeds. Toss thoroughly and refrigerate for several hours before serving.

I hope you all enjoy it as much as my husband and I do. It's a quick and easy
dish, so give it a try. Let me know what you think!
