12oz. cooked crumbled turkey sausage                  1-1/2 cups diced 
                                                         zucchini
10oz. cooked pinto beans                              1/2 cup chopped red
                                                        bell pepper
1/2 cup canned mild chilies,drained and
chopped                                              2-1/4 oz. shredded 
                                                    cheddar cheese
1 teaspoon garlic powder                       2-1/4 shredded part-skim
                                               mozzarella cheese
1/2 teaspoon ground cumin                       2 large eggs
1/2 teaspoon dried oregano                      2 egg whites
1/4 teaspoon freshly ground black pepper         3 tablespoons seasoned dried
                                                  bread crumbs
1 cup chopped onion                      chopped fresh cilantro for 
                                           garnish(opt.)
1-1/2 cups diced yellow squash

Preheat oven to 350F. Spray 13x9 inch baking pan with nonstick cooking spray,
set aside.  In medium bowl, combine turkey,beans,chilies,and seasonings.
Coarsely mash beans,transfer to prepared pan.  Spray large nonstick skillet
with non-stick cooking spray ;add onion.  cook over med-high heat 2 min.  Add
squash,zucchini,and bell pepper;cook 3 min. longer.  Spread vegetable mixture
over turkey mixture.
In small bowl,whisk together remaining ingredients except bread crumbs and
cilantro;pour over casserole.  Sprinkle with bread crumbs.  Bake until
golden brown and bubbly,about 30 min.  Garnish with cilantro if desired.
Makes 8 servings
