                          YORKSHIRE HOT-POT

1 lb peeled potatoes
1 lb peeled onions
seasoning  (to taste)
4 oz cooked ham
1 lb stewing veal
1/2 pint white or brown stock
1 oz margarine

To garnish:
1 tbsp. chopped parsley

1.  Cut potatoes and onions into thin slices.
2.  Put about a third of potatoes at bottom of casserole, season lightly.
3.  Blend onions with chopped cooked ham and diced stewing veal.
4.  Put half meat mixture into casserole, add seasoning, then a layer of
    potatoes; put remainder of meat and onion mixture into casserole,
    season and add the liquid.
5.  Cover with sliced seasoned potatoes and lid of casserole.
6.  Cook for 1 3/4 hours in the centre of oven.  (Oven temp. 300-325F)
7.  Lift lid off casserole, spread 1 oz margarine over potatoes, then
    leave uncovered so they brown well and continue cooking for a further
    30 minutes.
8.  Top with chopped parsley before serving.
