                         DUTCH OVEN CHICKEN & DUMPLINGS


                              1 whole chicken
                              2 cups bisquik
                              3/4 cup milk
                              1/2 Tsp. salt
                              4 to 6 carrots (optional)



               Boil the chicken and carrots in about 1 quart of salted
          water until tender (about 45 minutes). Remove from the wa-
          ter, and when cool, remove the skin and bones. If time and
          equipment permits, chill the cooking water and remove the
          fat that solidifies on the surface. Add the chicken meat and
          the broth to a 12 inch dutch oven and bring to a boil over
          high heat. While waiting for the chicken to boil, add milk
          to the bisquik to make the dough. Drop all of the dough
          (spoonful by spoonful) onto the boiling chicken. Reduce the
          heat to 6 or 8 coals underneath, cover and add 18 to 24
          coals on the lid. cook 15 to 20 minutes or until the dump-
          lings are cooked. Serves about 4.
