Here is a recipe that I have used for yeas for the hard Fudge it is great.
Just be sure that you cook it enough so that it sets right.  If you use a
candy Therm. it should turn out right.  It's just a little temperamental
when it come to setting up right, you can't under cook it.

Title: Old Fashioned Fudge
Categories: Candy, Desserts
Servings: 24

2 cups Gran. Sugar
2/3 Cup MIlk
1/4 tsp. Salt
1 tsp. Vanilla
2 oz. Unsweetened Choc. or 1/3 cup cocoa
2 Tbsp. Corn Syrup
2 Tbsp. Margarine
1/2 cup coarsely chopped nuts (oppt.)

Mix Sugar, Milk, Choc., Corn Syrup & Salt .  Cook over medium heat &
stirring constantly, until choc. is melted & Sugar is dissolved.

Cook stirring occasionally to 234 degrees until a small amount dropped
into a cup of COLD WATER forms a small ball.  Remove from heat and add
Vanilla & Marg.  Beat vigorously 5 to 10min. with spoon until candy is
thick & no longer GLOSSY.  Spread in buttered shallow dish.  Let cool.
