In any sort of dish that contains tomatoes, which are very acid, adding
coffee, either instant or brewed, neutralizes the acidity....at least, that's
what I've been told.  Smoothes out the flavor profile anyway...just as you
said.  Try adding it to spaghetti sauce, too.  Great twist!

another thing you can do is add a Carrot to the spaghetti sauce.  When your
done stewing the sauce just grab the carrot out and eat it ..  it's quite
delicous.  It serves the same purpose..smooths out the spaggetti sauce and add
a nice flavor in.
