Strictly speaking, the following chart will give one an idea about the health
advantages/disadvantages in the selection of cooking oils.  Remember that the
monosaturated and polyunsaturated fats are the best choices.  However, some
recent research has shown that the levels of HDL (good cholesterol) may
decrease in some people consuming diets high in polyunsaturated fatty acids.
Anyway, here are the facts:

As for personal choice, I like the flavor of food not oil so prefer corn oil
or safflower since they tend to not be as overbearing and heavy as olive oils
and peanut oils.
