I don't know how Popeye's does it but heres my basic recipe.  I don't
measure anything and I don't always put the same things in it.  It
just depends on what I have in the pantry.  Anyway here goes.

Soak about a pound of red kidney beans for several hours (overnight, if
you think that far ahead . . . I usually don't).  Drain the beans and
start with fresh water.  Put the beans and water to boiling.  (Fill the
pot about 3/4 full . . . you may have to add more water depending on
how long you cook em).  After the beans the beans come to a boil for 10-15
minutes add a couple of large diced onions, a couple of cloves of diced
garlic, and maybe a diced bell pepper.  Let it go another 10-15 minutes.
Add diced andouille (about 1/4 pound for flavoring, more if you really
like andouille . . . I really like andouille).  If you don't have andouille,
try tasso or smoked sausage or any other flavoring meat.  Let it go for
another 10 minutes or so.  Add salt, black pepper, cayenne pepper,
Tabasco Sauce, and whatever else is in the pantry, to taste.  (If you can
find some Cajun Power garlic sauce, add some of that too.)  By this time,
the beans should be getting pretty soft.  Stir occasionally to make sure
the beans are not burning on the bottom of the pot.  If they do, they'll
be ruined.  When the beans begin to stick a little, reduce the heat a
little.  Add water, if needed.  Keep cooking.  Keep stirring occasionally.
Keep reducing the heat if needed.  Keep tasting.  When it tastes good
and the consistency is right, its done.  Sorry I couldn't be more specific.
By the way there's no magic in when you put all the stuff in.  You can
put all of the ingredients in the pot from the start and it won't make
that much difference.

PS.  Make sure you cook your rice with salt.  I can't believe some people
don't.
