Fish/Salmon Recipes

BARBECUED SALMON

Fillet of Salmon
Garlic salt
Basil leaves
Curry powder
lemon pepper
Dill weed
Parsley flakes
thyme
rosemary
(optional - soy sauce or olive oil and white cooking wine)

Place salmon in a shallow pan pour (soy sauce or olice oil/wine) in just
to the thickness of meat. Sprinkle salmon generosly with the above
herbs, place meat side down in sauce and marinate for at least one hour.
Do not refrigerate, want meat at room temp. before barbecueing.  Place
meat side down on the barbecue until you can left meat with a spatula
without sticking to grill.  Turn, place lid on Barbecue and cook until
done. Adding mesquite chips to the coals gets that smokey flavor. (Can
Broil this recipe too)

SALMON FILLETS OR STEAKS

Marinate salmon in olive oil, season with garlic salt and pepper.
Marinate for at least 1 hour at room temp.  GRILL or BROIL.

SAUCES FOR GRILLED FILLETS OR STEAKS

Sour cream sauce: 1 pint sour cream, 1/2 c. chopped green onion, 1 med
cucumber chopped fine.  Combine all and chill. Serve over salmon.

Lemon parsely butter:  1 T. minced parsley, 2 T melted butter, 2 T lemon
juice.  Pour butter, then lemon juice, add parsely.  Serve with grilled
or broiled salmon/fish.

ISLANDER SALMON/FISH

3-5 pounds salmon/fish
1/2 garlic chopped
1 c. soy sauce
1/4 c. brown sugar
1 tsp. dry mustard
lemon slices

Mix all ingredients except lemon slices in large plastic bag with tighht
seal or in a backing dish.  Marinate (turning often) for 1 hour at room
temp.  Befroe baking pour off and reserve marinade to use as a baste
during the last 10 minutes of cooking.  GRILL OR BROIL.  granish with
lemon slices.

HERBED BAKED FISH

Thaw 1 pound fillets.  Place in 10x6x1 1/2 inch baking dish.  Dot with
butter.  Thoroughly blend 1 c. milk, 2 T flour.  Cook over medium heat,
til thickens.  Stir in 1/4 tsp. salt, 1/4 tsp. garlic salt, 1/8 tsp.
dried thyme (crushed,) dash oregano and 1/4 C. chopped green onion.
Pour sauce over fish.  Sprinkle lighly with paprika.  Bake uncovered at
350 degree for 20-25 min.  Makes 4 servings.  VERY GOOD!

SALMON IN WINE SAUCE

2 pounds salmon/fish steaks 1/2 inch thick
salt and pepper to taste
1 c. sherry or red cooking wine
juice of 1 lemon
1/4 c. olive oil

Place salmon/fish fillets in baking dish, sprinkle on salt and pepper.
Combine remaining ingredients and pour over fish.  Bake until tender in
a hot oven, 400 degree about 1/2 hour or until flakey.

My dad went salmon fishing for the first time this past summer in Alaska
and came home with oodles of fillets.  We have tried many of these and
although my husband doesn't like fish he did like these recipes.  I
have more if anyone is interested in more.
