It's Zucchini enchiladas--
1 1/2 lbs zucchini
1 Spanish onion
1 pint cottage cheese
enchilada sauce (I use Lawry's powdered, and follow the directions)
flour tortillas (8 or so)
Monterey Jack Cheese

Chop onion, slice zucchini, and saute in oil (about 2 tbsps.)
stir in cottage cheese
put in tortillas
cover bottom of 9/13 baking dish with enchilada sauce
put stuffed tortillas in dish
cover with remainder of sauce
cover with grated cheese
bake at 325 for 25 minutes

Note: this is not in perfect order (It helps if the baking dish is ready for
the tortillas before you stuff them, for example).  Also, I'm not sure you can
serve individual enchiladas, I never do.
