Beef Barley Soup
2 lb Lean boneless beef chuck -cut in 3/4-inch pieces
6 c  ;water
1 cn Tomatoes (28 oz); drained  -and liquid reserved
2 c  Celery (2 large ribs);sliced
4 md Carrots;cut in 1-inch chunks
1 lg Onion; sliced
2 ts Salt; optional
1 ts Dried thyme leaves
2 ts Pepper
1/2 c  Medium-grain barley
2 c  Frozen cut beans (9 oz)

 Put beef, water, and tomato liquid in a Dutch oven. Cover and bring   to a
boil over high heat.  Skim foam from top.  Add celery, carrots,   onion,
salt; thyme, pepper and barley; return to a boil.  Cover and   reduce heat to
low.  Simmer 2 hours or until meat is tender.  Add   green beans and
tomatoes; simmer uncovered 30 minutes longer.     Per serving:  274 calories,
28 g pro, 21 g car, 9 g fat, 74 mg   chol, 778 mg sod.  Source:  Woman's Day
