          Cantonese Fried Chicken

          4 lb. frying chicken parts
          3 T. dark soy sauce
          3 garlic cloves, minced
          2 slices ginger root, minced
          1 t. salt
          1/2 t. pepper
          1 egg, beaten
          3/4 c. unbleached flour
          1/4 c. cornstarch
          peanut oil for deep-frying

          Marinate chicken in mixture of soy sauce, garlic and
          ginger root at least 2 hours.  Season with salt and pepper
          and blend in beaten egg.  Combine flour and cornstarch and
          sprinkle over chicken pieces to form a thick paste.  Heat
          oil in wok or skillet and deep-fry chicken pieces a few at
          a time until golden and cooked through.  Drain and keep
          warm in oven until all chicken pieces have been fried.
