                CHICKEN AND SOUR CREAM ENCHILADAS

This recipe is one of my family favorites.  It is also one of the
most requested of all time and can be presented and is acceptable
for any and all occasions.

12 flour tortillas or more for smaller tortillas
6 chicken breasts, boned, skinned and cut into small bite size
pieces

Marinate Chicken Breasts prepared as above in a mixture of:
1 egg, beaten                 1 tsp. salt
1 heaping tsp. cornstarch     3 Tbsp. soy sauce
dash of pepper and MSG (opt.)

Cover all chicken pieces with the marinate and set aside for
about 20 minutes.

Stir fry chicken in hot oil (I use peanut or canola) until
chicken turns white in color (about 2 minutes). If unsure on
whether chicken is done or not cut one of the larger pieces in
half and if the meat is all white inside....it's done.  Remove
from pan and drain well.

In a large bowl, mix well the following:

1 8 oz. can chopped green chilies    16 oz. carton sour cream
2 c. grated cheddar cheese           Fried chicken pieces

Spread out a tortilla, place some of the chicken mixture
lengthwise down the center of the tortilla and roll in a burrito
like fashion and place tortilla in a 13x9x2 inch baking pan.
Repeat until all chicken mixture is used.

Sauce:
2 cans cream of chicken soup       2 c. chicken broth
8 oz. sour cream                   1 fine chopped onion
extra shredded cheese

In a saucepan, heat together until hot, not boiling:
2 cans cream of chicken soup  2 cups chicken broth
8 oz. sour cream              1 finely chopped onion

Pour mixture over enchiladas. Sprinkle with more shredded cheese
over top of soup mixture.  Bake at 350 degrees for 20 minutes or
until hot throughout and cheese is melted.

Serve with side dishes of salsa, taco sauce, shredded lettuce,
chopped onions, tomatoes, chopped black olives, guacamole, and
extra sour cream for toppings as desired.  Let your guests
experiment with toppings for added flavors.
